About the Role

The Kitchen Manager will be directly responsible for production planning, food quality, staff management, and adherence to strict health and safety standards. Success in this role will be measured by operational efficiency, team development, cost control, and the consistent delivery of exceptional products.

Key Activities

  • Plan and oversee kitchen production operations, setting priorities and schedules to meet demand based on forecasts and inventory.

  • Monitor sales trends and adjust production requirements accordingly.

  • Support the end-to-end supply chain by ensuring all products meet approved specifications and are available in proper quantities.

  • Conduct weekly inventories and prepare detailed reports (COGs, payroll, sales, and variances).

  • Manage weekly Profit & Loss (P&L) statements to ensure expenses remain within budget.

  • Review and validate vendor invoices to maintain accurate pricing and cost controls.

  • Lead, coach, and develop team members to deliver high performance and uphold company standards.

  • Assign daily goals and responsibilities, monitor progress, and provide feedback.\

  • Create and manage staff schedules, making adjustments as needed to meet production demands.

  • Inspect food, preparation processes, and final products to maintain the highest quality standards.

  • Resolve food quality or service concerns promptly and professionally.

  • Enforce compliance with all health, safety, and sanitation regulations (DOH, FDA, USDA, HACCP, OSHA).

  • Ensure all company policies, procedures, and food safety guidelines are consistently applied.

Preferred Skills

  • Experience with batch production of sauces, condiments, soups, or prepared foods preferred.

  • Skilled at leading and motivating teams in a fast-paced production environment.

Education and Experience

  • Bachelor’s degree in Culinary Arts, Food Science, or related field preferred; equivalent experience considered.

  • Minimum 5 years’ experience managing or supervising a large kitchen, commissary, or food production facility.

  • At least 3 years in a central food production environment in a management or high-supervisory role.

  • Strong knowledge of food safety, HACCP, and regulatory compliance.
